Method
- Heat olive oil in a skillet over medium-high heat.
- Season chicken with salt and pepper and sprinkle half the cilantro on top.
- Brown chicken 3–5 minutes per side and place in slow cooker.
- Add black beans, sweet potatoes, and bell pepper on top.
- In a bowl mix salsa, broth, remaining cilantro, garlic, cumin, and allspice.
- Pour mixture into slow cooker.
- Cook on LOW for 4 hours.
- Squeeze lime juice over stew before serving.
Notes
- Add sweet potatoes during the last hour for firmer texture.
- Use mild salsa for less heat.
- Freezes very well for meal prep.
