Slow Cooker Latin Chicken Stew

Ingredients
  

  • 1 tablespoon olive oil
  • 3 pounds skinless chicken thighs
  • Salt and black pepper to taste
  • 1/2 cup fresh cilantro chopped (divided)
  • 2 cans 15.5 oz each black beans, rinsed and drained
  • 2 large sweet potatoes cut into chunks
  • 1 red bell pepper sliced
  • 1 cup hot salsa
  • 1/2 cup chicken broth
  • 3 garlic cloves chopped
  • 2 teaspoons ground cumin
  • 1/2 teaspoon ground allspice
  • Lime wedges for garnish

Method
 

  1. Heat olive oil in a skillet over medium-high heat.
  2. Season chicken with salt and pepper and sprinkle half the cilantro on top.
  3. Brown chicken 3–5 minutes per side and place in slow cooker.
  4. Add black beans, sweet potatoes, and bell pepper on top.
  5. In a bowl mix salsa, broth, remaining cilantro, garlic, cumin, and allspice.
  6. Pour mixture into slow cooker.
  7. Cook on LOW for 4 hours.
  8. Squeeze lime juice over stew before serving.

Notes

  • Add sweet potatoes during the last hour for firmer texture.
  • Use mild salsa for less heat.
  • Freezes very well for meal prep.
