Ingredients
  

  • 1 teaspoon olive oil
  • 1 –1½ lbs boneless skinless chicken breasts or thighs
  • 2 teaspoons Italian seasoning divided
  • Salt and pepper to taste
  • ½ cup diced carrots
  • ½ cup diced celery
  • ½ cup diced onion
  • ¼ cup sun-dried tomatoes diced
  • 3 garlic cloves minced
  • ¼ cup flour
  • 2 tablespoons tomato paste optional
  • 6 –8 cups chicken broth
  • 6 oz pasta small shells or similar
  • 1 cup heavy whipping cream
  • ½ –1 cup grated parmesan cheese
  • –3 cups fresh spinach

Method
 

  1. Heat oil in a large pot over medium-high heat. Add chicken, 1 teaspoon seasoning, salt, and pepper. Brown 4–5 minutes.
  2. Add onions, carrots, celery, sun-dried tomatoes, and garlic. Cook until translucent.
  3. Sprinkle in flour and tomato paste (if using). Stir well.
  4. Gradually whisk in broth, deglazing the pot.
  5. Add pasta, remaining seasoning, salt, and pepper. Cover and simmer 20 minutes.
  6. Stir in cream, spinach, and parmesan. Simmer 5 minutes.
  7. Taste and adjust seasoning before serving.
