Ingredients
  

  • 1/4 cup olive oil
  • 2 cloves garlic minced
  • 2 tablespoons lemon juice
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1 1/2 pounds chicken breast cut into bite-size pieces
  • 6 wooden skewers

  • Tzatziki Sauce:
  • 1 cup Greek yogurt 6 oz
  • 1/2 cucumber peeled, seeded, grated
  • 1 tablespoon olive oil
  • 2 teaspoons white vinegar
  • 1 clove garlic minced
  • Pinch of salt

Method
 

  1. Combine olive oil, garlic, lemon juice, oregano and salt.
  2. Add chicken and marinate in refrigerator for 2 hours.
  3. Mix all tzatziki sauce ingredients and refrigerate 1–2 hours.
  4. Soak wooden skewers in water for 15 minutes.
  5. Preheat grill to medium-high heat.
  6. Thread chicken onto skewers.
  7. Grill 7–8 minutes per side until cooked through.
  8. Serve hot with chilled tzatziki sauce.

Notes

  • Marinate overnight for stronger flavor
  • Chicken thighs can be used instead of breast
  • Bake at 425°F for 18 minutes if no grill available
