Ingredients
  

  • lbs boneless chicken thighs cubed
  • 1 large egg
  • 1 tsp salt
  • 1 tsp sugar
  • Pinch white pepper
  • 1 cup cornstarch
  • Vegetable oil for frying
  • 3 tbsp chopped green onions
  • 1 clove garlic minced
  • 6 dried red chilies
  • ½ cup sugar
  • ¼ cup soy sauce
  • 3 tbsp chicken broth
  • 1 tbsp rice vinegar
  • 2 tsp sesame oil
  • ¼ tsp ground ginger

Method
 

  1. Heat oil to 375°F for frying.
  2. Mix chicken with egg, salt, sugar, pepper, and cornstarch.
  3. Fry chicken in batches until golden; remove and cool.
  4. Refry chicken for 2 minutes until deeply crispy.
  5. Sauté garlic, chilies, and green onions; add sauce ingredients.
  6. Thicken sauce and toss chicken until evenly coated.
