Ingredients
  

  • 2 tablespoons olive oil
  • pounds skinless boneless chicken breasts, thinly sliced
  • 1 cup heavy cream
  • ½ cup chicken broth
  • ½ cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1 cup spinach chopped
  • ½ cup sun-dried tomatoes chopped

Method
 

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add chicken and cook until browned and fully cooked, about 3–5 minutes per side. Remove chicken and set aside.
  3. In the same skillet, add heavy cream, chicken broth, Parmesan cheese, garlic powder, and Italian seasoning. Whisk and simmer until sauce begins to thicken, about 5 minutes.
  4. Add spinach and sun-dried tomatoes; cook until spinach wilts, about 1 minute.
  5. Return chicken to the skillet and simmer until heated through, 2–3 minutes.
  6. Serve hot with your favorite side.

Notes

  • Double the sauce if serving over pasta
  • Add fresh garlic for extra flavor
  • Salmon can be substituted for chicken
