Method
- Preheat grill to high heat and oil grates.
- Season inside of chicken with salt.
- Tie legs and wings, then secure on rotisserie rod.
- Cook on high heat for 10 minutes.
- Mix butter, salt, paprika and pepper.
- Reduce grill to medium heat and baste chicken.
- Cook 1 to 1½ hours, basting occasionally.
- Cook until internal temperature reaches 180°F.
- Remove and rest 10–15 minutes before carving.
Notes
- Pat chicken dry for crispy skin
- Rest before cutting to keep juices inside
- Baste every 20–30 minutes for best flavor
