Ingredients
  

  • 5 cups water divided
  • 1 14.5 oz can chicken broth
  • 2 skinless boneless chicken breasts cubed
  • 3 medium carrots chopped
  • 3 celery stalks chopped
  • 1 medium onion chopped
  • 2 chicken bouillon cubes
  • 1/3 cup uncooked white rice
  • Salt to taste
  • Black pepper to taste

Method
 

  1. In a large pot, bring 4 cups water and chicken broth to a boil.
  2. Add chicken, carrots, celery, onion, and bouillon cubes.
  3. Reduce heat, cover, and simmer 15 minutes.
  4. Add rice and up to 1 cup additional water if needed.
  5. Simmer 15 minutes until rice is tender.
  6. Season with salt and pepper.
  7. Serve hot.

Notes

  • Add extra broth when reheating
  • Use leftover cooked chicken if available
  • For creamier soup, add a splash of milk at the end
