Ingredients
  

  • 1 tablespoon Italian seasoning
  • 1 tablespoon onion powder
  • 1 tablespoon garlic powder
  • 4 skinless boneless chicken breasts, pounded to ¼-inch thickness
  • 4 tablespoons garlic-flavored cream cheese spread
  • ¼ cup garlic and herb seasoned dry bread crumbs
  • 1 tablespoon unsalted butter
  • 1 tablespoon vegetable oil

Method
 

  1. Mix Italian seasoning, onion powder, and garlic powder in a small bowl. Sprinkle evenly over both sides of chicken breasts.
  2. Place 1 tablespoon cream cheese in the center of each breast and spread slightly.
  3. Tuck in sides and roll tightly; secure with toothpicks.
  4. Roll chicken in bread crumbs to coat. Cover and freeze for 30 minutes.
  5. Preheat oven to 400°F (200°C).
  6. Heat butter and oil in a skillet over medium-high heat. Brown chicken rolls on all sides, about 5 minutes.
  7. Transfer rolls to a baking dish.
  8. Bake until chicken is cooked through and juices run clear, about 20 minutes.
  9. Spoon pan drippings over chicken before serving.

Notes

  • Freezing helps keep filling from leaking
  • Add Parmesan to breadcrumbs for extra flavor
  • Serve sliced for best presentation
