Ingredients
  

  • cup pitted prunes halved
  • 8 small green olives
  • 2 tablespoons capers with liquid
  • 2 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • 1 tablespoon minced garlic
  • 1 tablespoon dried oregano
  • 2 bay leaves
  • Salt and black pepper to taste
  • 1 3-lb whole chicken, cut into pieces
  • ¼ cup packed brown sugar
  • ¼ cup dry white wine
  • 1 tablespoon fresh parsley chopped

Method
 

  1. Mix prunes, olives, capers, oil, vinegar, garlic, oregano, bay leaves, salt, and pepper.
  2. Add chicken and coat well. Cover and refrigerate overnight.
  3. Preheat oven to 350°F.
  4. Sprinkle chicken with brown sugar and pour wine around it.
  5. Bake for 1 hour, basting several times.
  6. Transfer to a platter, spoon juices over, and garnish with parsley.
