Ingredients
  

  • 2 tbsp peanut oil divided
  • 1 shallot finely chopped
  • ¼ white onion chopped
  • 2 tbsp butter
  • 1 tbsp ginger garlic paste
  • 2 tsp lemon juice
  • 2 tsp garam masala divided
  • 1 tsp chili powder
  • 1 tsp ground cumin
  • 1 bay leaf
  • 1 cup tomato puree
  • 1 cup half-and-half
  • ¼ cup plain yogurt
  • Salt and pepper to taste
  • 1 lb boneless skinless chicken thighs
  • ¼ tsp cayenne pepper
  • 1 tbsp cornstarch + ¼ cup water

Method
 

  1. Sauté shallot and onion in oil until soft.
  2. Add butter, spices, and tomato puree; simmer.
  3. Stir in cream and yogurt; set sauce aside.
  4. Cook chicken until lightly browned.
  5. Add chicken to sauce and thicken.
  6. Serve hot with rice and naan.
