Ingredients
  

  • 1 3½-lb whole chicken, cut into 8 pieces
  • 2 cups buttermilk
  • Black pepper salt, paprika, white pepper
  • Dried rosemary thyme, oregano, sage
  • Cayenne pepper
  • 2 cups all-purpose flour
  • Garlic powder onion powder
  • Peanut oil for frying

Method
 

  1. Season chicken with spices and coat with buttermilk.
  2. Cover and refrigerate for at least 6 hours.
  3. Mix flour with remaining seasonings in a shallow dish.
  4. Dredge chicken thoroughly in seasoned flour.
  5. Heat oil to 350°F and fry until golden and cooked through.
  6. Drain on paper towels and serve hot.
