Caprese Chicken

Ingredients
  

  • 4 boneless skinless chicken breasts 6 oz each
  • 1 cup Italian salad dressing
  • 1 tablespoon Italian herb seasoning
  • 1 tablespoon chicken seasoning Montreal style
  • 2 tablespoons canola oil
  • 4 slices fresh mozzarella
  • 4 tomato slices
  • 4 fresh basil leaves
  • 1 tablespoon balsamic vinegar

Method
 

  1. Place chicken, dressing, herbs, and seasoning in a zip bag. Marinate 4–6 hours in refrigerator.
  2. Preheat oven to 500°F (260°C).
  3. Heat oil in oven-safe skillet over medium-high heat.
  4. Remove chicken from marinade and sear 2 minutes per side.
  5. Transfer skillet to oven and bake 12 minutes until cooked through.
  6. Top each chicken breast with mozzarella and tomato.
  7. Bake 3–5 minutes until cheese melts.
  8. Remove from oven, add basil leaf, and drizzle balsamic vinegar before serving.

Notes

  • Pound chicken for even cooking
  • Do not overbake
  • Add basil after cooking for best flavor
