Ingredients
  

  • 1 cup crushed buttery round cracker crumbs
  • 2 large eggs beaten
  • 1/2 teaspoon garlic salt
  • Ground black pepper to taste
  • 4 boneless skinless chicken breast halves
  • 1/2 cup butter cut into pieces

Method
 

  1. Preheat oven to 375°F (190°C).
  2. Beat eggs in a shallow bowl.
  3. Mix cracker crumbs, garlic salt, and pepper in another bowl.
  4. Dip chicken in eggs, then coat in crumb mixture.
  5. Place chicken in greased baking dish.
  6. Scatter butter pieces over and around chicken.
  7. Bake 40 minutes until internal temperature reaches 165°F (74°C).
  8. Rest 5 minutes and serve.

Notes

  • Pound chicken slightly for even cooking
  • For extra flavor add parmesan to crumbs
  • Reheat in oven for best crisp texture
