Ingredients
  

  • pounds skinless boneless chicken breast cubed
  • 1 teaspoon salt
  • 1 15 oz can diced tomatoes with juice
  • ½ cup water
  • 1 tablespoon minced garlic
  • 1 6 oz box chicken flavored dry stuffing mix
  • 2 cups shredded mozzarella cheese
  • 1 tablespoon Italian seasoning

Method
 

  1. Preheat oven to 400°F (200°C) and grease a 9x13 baking dish.
  2. Mix tomatoes, water, garlic, and stuffing mix in a bowl; let soften.
  3. Toss cubed chicken with salt and spread in baking dish.
  4. Sprinkle mozzarella and Italian seasoning over chicken.
  5. Spread stuffing mixture evenly on top.
  6. Bake uncovered for 30 minutes until chicken is cooked and top is golden.
  7. Rest 5 minutes before serving.

  • Use fresh tomatoes for brighter flavor
  • Add parmesan for extra richness
