Easy homemade barbecue chicken pizza with spicy BBQ sauce, chicken, peppers, onion, cilantro and melted Colby-Jack cheese. Perfect quick weeknight dinner.

Ingredients
  

  • 1 12-inch pre-baked pizza crust
  • 1 cup spicy barbecue sauce
  • 2 cooked skinless boneless chicken breasts cubed
  • 1 cup sliced pepperoncini peppers
  • 1 cup chopped red onion
  • 1/2 cup chopped fresh cilantro
  • 2 cups shredded Colby-Jack cheese

Method
 

  1. Preheat oven to 350°F (175°C).
  2. Place pizza crust on a baking sheet.
  3. Spread barbecue sauce evenly over the crust.
  4. Add cubed chicken, pepperoncini peppers, red onion, and cilantro.
  5. Sprinkle shredded Colby-Jack cheese over the top.
  6. Bake for 15 minutes until cheese is melted and bubbly.
  7. Rest for 2–3 minutes, slice, and serve.

Notes

  • Use rotisserie chicken for faster prep
  • Add jalapeños for extra heat
  • Reheat in pan or oven for crispy crust
  • Mozzarella can replace Colby-Jack cheese
